{"id":1666,"date":"2014-05-03T15:37:06","date_gmt":"2014-05-03T15:37:06","guid":{"rendered":"https:\/\/johnhootonphotography.com\/?page_id=1666"},"modified":"2014-06-25T15:52:40","modified_gmt":"2014-06-25T15:52:40","slug":"authentic-tandoori-chicken","status":"publish","type":"page","link":"https:\/\/johnhootonphotography.com\/?page_id=1666","title":{"rendered":"Authentic Tandoori Chicken"},"content":{"rendered":"\r\n<a href=\"https:\/\/johnhootonphotography.com\/wp-content\/uploads\/2014\/05\/Tandoori_Chicken-9006-2.jpg\" class=\" prettyPhoto\"  rel=\"prettyPhoto[p_946]\" title=\"Authentic Tandoori Chicken\" >\r\n<img decoding=\"async\" src=\"https:\/\/johnhootonphotography.com\/wp-content\/uploads\/2014\/05\/Tandoori_Chicken-9006-2.jpg\" width=\"\" height=\"\" alt=\"Authentic Tandoori Chicken\" class=\"frame_box\" \/><\/a> \r\n<div class=\"col col_2_5 \"><div class=\"inner\">\r\n<h3>Ingredients<\/h3>\r\n<h6>For the Tandoori Chicken:<\/h6>\r\n8 chicken legs skinned<\/br>\r\n2 medium sized red onions<\/br>\r\n1 lime<\/br>\r\n1 tbsp ginger paste<\/br>\r\n1 tbsp garlic paste<\/br>\r\n300ml natural set yoghurt<\/br>\r\n1\/4tsp chilli powder<\/br>\r\n1\/4tsp turmeric<\/br>\r\n2 tsp fenugreek leaves<\/br>\r\n1 tbsp garam masala<\/br>\r\n1 tbsp ground cumin<\/br>\r\n1 tbsp ground coriander<\/br>\r\n\u00bd tsp salt<\/br>\r\n\u00bd tsp black pepper<\/br>\r\n\u00bc tsp tandoori food colour<\/br>\r\n\r\n<h6>For the Mint Dip:<\/h6>\r\n1 bunch fresh mint<\/br> \r\n1 bunch fresh coriander<\/br>\r\n\u00bd tsp ground coriander<\/br>\r\n\u00bd tsp ground cumin<\/br>\r\n6 garlic cloves<\/br>\r\n1 tbsp ginger paste<\/br>\r\n\u00bd tbsp caster sugar<\/br>\r\n200ml natural set yoghurt<\/br>\r\n\u00bd tsp salt\r\n\r\n<h6>To Serve:<\/h6>\r\nFresh Coriander Leaves chopped<\/br>\r\nSliced Lemon<\/br>\r\nCucumber Salad<\/br>\r\n<\/div><\/div>\r\n\r\n<div class=\"col col_3_5 \"><div class=\"inner\">\r\n<h3>Method<\/h3>\r\n<p>Score round the knuckle end and skin the chicken legs. Make four long deep score marks along the flesh of each chicken piece and place in large dish.<\/p>\r\n<h6>Initial Marinade:<\/h6>\r\nPlace the chilli powder, \u00bd tsp of salt and the juice of 1 lime in a small bowl. Mix together, then pour this over the chicken legs and rub it well into the chicken, especially the score cuts.\r\n\r\n<h6>Main Marinade:<\/h6>\r\n<p>Place the yoghurt into a medium sized bowl. Put the fenugreek leaves into a small microwave dish and microwave them for 30 seconds to 50 seconds so that they are completely dry. Then rub them in your hands to a fine powder and add it to the yoghurt. Add the garlic paste, the ginger paste, \u00bd tsp salt and \u00bd tsp black pepper, and the garam masala. Add the ground cumin, ground coriander, turmeric powder and \u00bc tsp tandoori food colour. Mix all these ingredients together.<\/p>\r\n\r\n<p>Place the chicken in a shallow bowl and coat it thoroughly in the creamy marinade by turning it. Cover the bowl and place it in the fridge for 2-4hrs, 4 preferably, depending how much time you have!<\/p>\r\n\r\n<h6>Mint Sauce:<\/h6>\r\nPut all the mint sauce ingredients in a blender and blend until smooth. If you don\u2019t have a blender, chop the mint, coriander and garlic cloves very finely and then mix them together with the other ingredients.\r\n\r\n<h6>To Cook the Tandoori Chicken:<\/h6>\r\nPreheat the oven to 400\u00b0F. Place the chicken pieces in a roasting dish on a wire rack so that the juices and sauce can drip to the bottom of the dish. Place the dish one notch above the middle of the hot oven and cook for 25 minutes or until the chicken is just starting to char. Turn the chicken over for about another ten minutes to char the other side. Serve with the mint dip, poppadoms, and a tomato and onion salad.
