{"id":1779,"date":"2014-05-06T01:56:32","date_gmt":"2014-05-06T01:56:32","guid":{"rendered":"https:\/\/johnhootonphotography.com\/?page_id=1779"},"modified":"2014-06-29T04:32:02","modified_gmt":"2014-06-29T04:32:02","slug":"ultimate-macaroni-cheese","status":"publish","type":"page","link":"https:\/\/johnhootonphotography.com\/?page_id=1779","title":{"rendered":"Ultimate Macaroni Cheese"},"content":{"rendered":"\r\n<a href=\"https:\/\/johnhootonphotography.com\/wp-content\/uploads\/2014\/05\/Superb_Macaroni_Cheese-3744.jpg\" class=\" prettyPhoto\"  rel=\"prettyPhoto[p_28]\" title=\"Ultimate Macaroni Cheese\" >\r\n<img decoding=\"async\" src=\"https:\/\/johnhootonphotography.com\/wp-content\/uploads\/2014\/05\/Superb_Macaroni_Cheese-3744.jpg\" width=\"\" height=\"\" alt=\"Ultimate Macaroni Cheese\" class=\"frame_box\" \/><\/a>\r\n<div class=\"col col_2_5 \"><div class=\"inner\">\r\n<h3>Ingredients<\/h3>\r\n300g of macaroni<\/br>\r\n50g pancetta diced<\/br>\r\nOne large or two small spring onions, chopped<\/br>\r\n4 tbsp home-made bread crumbs<\/br>\r\nHandful of fresh parsley\r\n<h6>For the Cheese Sauce:<\/h6>\r\n40g of butter<\/br> \r\n40g of plain flour<\/br>\r\n1\/4 tsp of ground nutmeg<\/br> \r\n1 tsp of English mustard powder or mustard<\/br>\r\n200ml of milk<\/br>\r\n285ml (10oz) of single cream<\/br>\r\n200g of extra strong mature cheddar<\/br>\r\n100g of fresh Parmesan coarsely grated<\/br>\r\nSalt, and white pepper to season<\/br>\r\nGood pinch of dried chilli flakes\r\n<\/div><\/div>\r\n<div class=\"col col_3_5 \"><div class=\"inner\">\r\n<h3>Method<\/h3>\r\n<p>1. Preheat the oven to 200 C\/400 F\/gas mark six.<\/p>\r\n\r\n<p>2. Fry the pancetta in a pan for five minutes, then add the chopped spring onion, and fry for a further five minutes. Set aside.<\/p>\r\n\r\n<p>3. Set a large pan of water on the heat, add salt and a good dash of olive oil.  When the water boils add the macaroni and cook as per instructions on the packet.<\/p>\r\n\r\n<p>4. Melt the butter in a medium-sized saucepan and add the flour, mustard, chilli flakes and nutmeg. Stir briskly with a wooden spoon and add the milk 25 ml at a time, stirring all the time to make a smooth roux.  Add the single cream gradually, white pepper and a little salt. Add three quarters of the Cheddar and three quarters of the Parmesan. Add the cooked bacon and spring onions, and mix together.<\/p>\r\n\r\n<p>5. Drain the macaroni and rinse it with boiling water if it is 'starchy'. Put the macaroni in a mixing bowl, and add the cheese sauce. Mix together.<\/p>\r\n\r\n<p>\u20286. Pour the macaroni and cheese sauce mix into a large baking dish. Sprinkle the top with the breadcrumbs, then add the remaining Parmesan cheese and finally sprinkle on the remaining cheddar.<\/br><\/br>\r\n\r\n7. Place the dish towards the top of your oven and bake for 20 to 25 minutes or until the top is bubbling and golden.<\/p>\r\n\r\n<p>8. Remove from the oven and sprinkle over the chopped parsley to garnish.
