{"id":788,"date":"2013-10-20T02:20:41","date_gmt":"2013-10-20T02:20:41","guid":{"rendered":"https:\/\/johnhootonphotography.com\/?page_id=788"},"modified":"2014-06-26T22:32:20","modified_gmt":"2014-06-26T22:32:20","slug":"cream-of-tomato-and-basil-soup","status":"publish","type":"page","link":"https:\/\/johnhootonphotography.com\/?page_id=788","title":{"rendered":"Cream of Tomato and Basil Soup"},"content":{"rendered":"\r\n<a href=\"https:\/\/johnhootonphotography.com\/wp-content\/uploads\/2013\/10\/Tomato_Soup-5552.jpg\" class=\" prettyPhoto\"  rel=\"prettyPhoto[p_233]\" title=\"Cream of Tomato and Basil Soup\" >\r\n<img decoding=\"async\" src=\"https:\/\/johnhootonphotography.com\/wp-content\/uploads\/2013\/10\/Tomato_Soup-5552.jpg\" width=\"\" height=\"\" alt=\"Cream of Tomato and Basil Soup\" class=\"frame_box\" \/><\/a> \r\n<div class=\"col col_2_5 \"><div class=\"inner\">\r\n<h3>Ingredients<\/h3>\r\n1 onion<\/br>\r\n4 garlic cloves<\/br>\r\n1 long sweet red pepper<\/br>\r\n12 medium size tomatoes<\/br>\r\n2 oz or 50g butter<\/br>\r\n250ml chicken stock<\/br>\r\n75ml double cream<\/br>\r\n1 desert spoon of dried basil<\/br>\r\nsome fresh basil<\/br>\r\n\u00bc tsp ground white pepper<\/br>\r\n1 level tsp sea salt\r\n<\/div><\/div>\r\n<div class=\"col col_3_5 \"><div class=\"inner\">\r\n<h3>Method<\/h3>\r\n<p>Peel and chop the garlic cloves and the onion. De-seed and chop the long sweet red pepper. Melt the butter in a large saucepan and add the onion, garlic and sweet red pepper. Cover and simmer gently stirring now and then until the onions are soft \u2013 about ten minutes.<\/p>\r\n<p>Meanwhile, cut the tomatoes in half, splitting where the stalk was. Cut out a V to remove the hard stalk remnants and roughly chop the tomatoes. Add them to the other ingredients and bring everything back to a simmer. Add the dry basil, salt and pepper, cover, and let it all stew gently for about 20 minutes stirring occasionally.<\/p>\r\n<p>Add the chicken stock and simmer gently for another ten minutes.<\/p>\r\n<p>Remove from the heat and now blend all the ingredients in a liquidiser or with an electric hand blender. Return it to the saucepan, taste and adjust the seasoning if necessary.<\/p>\r\n<p>Stir in 50ml of double cream saving 25ml for presentation. Serve with some torn fresh basil leaves and a swirl of cream. Revel in the taste, consume luxuriously then relax for ten minutes.
