{"id":847,"date":"2013-10-20T21:47:48","date_gmt":"2013-10-20T21:47:48","guid":{"rendered":"https:\/\/johnhootonphotography.com\/?page_id=847"},"modified":"2014-06-28T06:24:28","modified_gmt":"2014-06-28T06:24:28","slug":"fruit-brazil-butter-cake","status":"publish","type":"page","link":"https:\/\/johnhootonphotography.com\/?page_id=847","title":{"rendered":"Fruit Brazil Butter Cake"},"content":{"rendered":"\r\n<a href=\"https:\/\/johnhootonphotography.com\/wp-content\/uploads\/2013\/10\/Fruit_Brazil_Butter_Cake-65061.jpg\" class=\" prettyPhoto\"  rel=\"prettyPhoto[p_51]\" title=\"Fruit Brazil Butter Cake\" >\r\n<img decoding=\"async\" src=\"https:\/\/johnhootonphotography.com\/wp-content\/uploads\/2013\/10\/Fruit_Brazil_Butter_Cake-65061.jpg\" width=\"\" height=\"\" alt=\"Fruit Brazil Butter Cake\" class=\"frame_box\" \/><\/a>  \r\n<div class=\"col col_2_5 \"><div class=\"inner\">\r\n<h3>Ingredients<\/h3>\r\n175g\/6oz butter<\/br>\r\n175g\/6oz caster sugar<\/br>\r\n3 medium eggs, beaten<\/br>\r\n50g\/2oz glazed cherries or candied lemon peel, finely chopped<\/br>\r\n125g\/4oz dried apricots cut into small pieces<\/br>\r\n125g\/4oz sultanas<\/br>\r\n125g\/4oz brazil nuts, roughly chopped<\/br>\r\n125g\/4oz plain flour<\/br>\r\n125g\/4oz self raising flour<\/br>\r\napricot jam, sieved and melted<\/br>\r\nzest of 1 lemon<\/br>\r\n250g\/8oz marzipan and brazil nuts to decorate\r\n<\/div><\/div>\r\n<div class=\"col col_3_5 \"><div class=\"inner\">\r\n<h3>Method<\/h3>\r\n<p>Line a 20.5cm (8 inch) round cake tin or a long cake tin with buttered greaseproof paper, or grease the inside of the tin and dust with flour.<\/p>\r\n\r\n<p>Whisk the butter and sugar together in a bowl until pale and fluffy. Gradually add the beaten eggs, beating all the time.<\/p>\r\n\r\n<p>Mix the chopped cherries, apricots, sultanas, chopped nuts and lemon zest together.<\/p>\r\n\r\n<p>Sift the plain and self-raising flours and fold into the whisked mixture, then add the fruit and nuts. Spoon into the prepared tin.<\/p>\r\n\r\n<p>Bake in the oven at 180\u00b0C (350\u00b0F) mark 4 for 1\u00bc hours (cover with foil after 40 minutes if the top is becoming too brown). Cool a little then turn out onto a wire rack.<\/p>\r\n\r\n<p>Heat the apricot jam and sieve it in to a small bowl. Brush the top of the cake with the apricot glaze, and then cover with rolled-out marzipan. I found that rolling it between two sheets of cling film saves a lot of woe. Trim and crimp the edges and cut a diamond pattern. Place a sliced nut in each square.
