
Had a great evening at Jamie Oliver’s Recipease last week with my daughter, making ravioli, caramelli, and tortellini with a roast butternut squash and ricotta filling. Recipease offers fun cookery lessons where you get to eat the food there and then or take it home for further cooking! Pasta being a fresh dish, is of the eat it there and then variety, with a glass of wine included. The ‘Unbeatable filled pasta’ sessions start from scratch with an egg and 00 strong flour. This is a ‘bring a friend’ lesson, and while one of you might be making the pasta, the other can prepare the filling. Methods are clearly explained and demonstrated by your host chefs, and then it’s your turn to repeat the methods yourselves. You are shown how to cut and fold three types of pasta starting with possibly the easiest – ravioli, followed by tortellini, and finally caramelli where the pasta is shaped like a wrapped sweet. Any trimmings can be quickly turned into farfalle – ‘butterflies’, the pasta that looks like little bows.
There are three venues for Recipease Lessons – Notting Hill, Clapham and Brighton and there are over 50 dishes to choose from that you can make during your lesson, from Mexican street food to stuffed sea bass. This is a very entertaining way of making a dinner date with a difference!
