This is the first meal I have cooked from the HelloFresh range, so this is a good time to review this recipe. Eating fresh food is something we should all do, but it can often be a bind as it involves planning the meal, shopping for ingredients, measuring quantities and finally cooking the recipe, leaving what’s left over from the ingredients for either another meal, or to disappear at the back of a cupboard only to be discovered three years later. In the worst scenario spare food gets thrown away contributing to the 7 million tonnes of food thrown away each year in the UK. This costs the average family £60 per month.
HelloFresh dispenses with all this hassle. First of all the ingredients are delivered to you in a box so you don’t have to go shopping. Meats are wrapped in iced synthetic wool packs which will keep everything fresh, even if left on your doorstep for a few hours. This recipe took only half an hour to prepare and cook. The family felt as if they had eaten something really fresh that tasted delicious and was good for them. As for the cook, there was no shopping, organisation was easy because everything was already measured. Food required the minimum of preparation and the cooking was a doddle because HelloFresh provide you with fully illustrated step by step recipe cards.

Ingredients
3 tbsp chopped Coriander
2 tbsp chopped Mint
1 pack Feta Cheese
1 sliced Courgette
2 Chicken Breasts
1/2 Lime
1 Vegetable Stock Pot (Knorr)
135g/5oz Couscous
Method
1. Preheat Pre-heat your oven to 220 degrees. Roughly chop your coriander and mint and cut the feta cheese into roughly 1cm chunks. Chop the very top and bottom from your courgette. Slice the courgette lengthways into strips about 2cm wide and then slice lengthways again into as many strips as possible.
2. Coat each chicken breast in 1/2 tsp of olive oil and place them on a baking tray. Squeeze over your lime juice and season with a pinch of salt and pepper before putting them into the oven for 20 mins (or until the middle is no longer pink).
3. Heat 1 tsp of olive oil in a non- stick pan on a high heat. Season the courgette strips with a pinch of salt and pepper and then fry them off for a few minutes. When they have browned off slightly on both sides set them aside on a plate.
4. Meanwhile dissolve your stock pot in 250ml of boiling water in a pan. Add in the couscous, put a lid on the pan and then leave the pan off the heat until the rest of the meal is ready.
5. Make a start on your autobiography.
6. Check that your chicken is cooked through. Fluff the couscous up with a fork and add in the chopped coriander, chopped mint, feta and the courgettes.
7. Serve the couscous with the roasted chicken and garnish by grating on a bit of lime zest (don’t grate down to the bitter white part though).
